Steamed Rice

The perfect pot of rice. Well not perfect, cause nothing is life is, right? But this rice is pretty darn reliable.
Ingredients (serves 4-6)
- 3 cups White Rice
- 3 1/2 cups Water
- Optional coconut milk (for coconut rice) - subsitute 2 cups of coconut milk for 2 of the cups of water. So total 2 cups coconut milk and 1 1/2 cups water.
Method
- Put the rice in a medium sized pot.
- Rinse the rice several times in water until the rice runs clear.
- Add the water and coconut milk (if using), to the rice and stir.
- Put the mixture on high heat. Use a metal spatula to scrape on the bottom of the pot occasionally to stop the rice sticking to the bottom and mix the rice around gently.
- As soon as all the water/coconut milk is absorbed into the rice, turn the rice onto the lowest setting and put a lid on. Allow the rice to steam for 15 minutes.
- Give the rice a fluff up with a fork, return the lid. Turn the heat off and give the rice another 10-15 minutes to steam/finish cooking.
- Use immediately or will store in the fridge for 1-2 days.
Optional - Serve with Geeta's curry and Raita.
