Seasoned/BBQ Style Roast Chicken

This recipe is based on a Stephanie Alexander recipe, which is based on Annie Smither's recipe for a 'Chicken Shop' chicken. It always produces tasty succulent chicken.
Ingredients
- 1 whole chicken
- Zest from a whole lemon
- Juice from 1/4 lemon
- ¾ lemon as 1/4 pieces
- 1 tablespoon olive oil
- 1 teaspoons sea salt
- ½ teaspoon pepper
- ½ teaspoon paprika
Equipment
- Roasting Tray
- Rack (optional – to sit chicken on over tray)
- Large mixing bowl
- Small mixing bowl
- Grater
- Measuring spoons
- Small spoon for mixing
- Probe Thermometer (optional)
Method
- Preheat the oven to 140°C in fan-forced/convection oven, or °160C for a regular oven setting.
- Combine the lemon zest, lemon juice, olive oil, salt, pepper and paprika in a small bowl and mix together.
- Put the chicken in a large mixing bowl
- Rub the spice mixture over the skin of the chicken and into the cavity
- Pop the other 3 x ¼ lemon slices into the chicken cavity
- Cook the chicken for 1 hr 45 mins-2hrs and 15 mins (depending on the size of the chicken – a smaller sized chicken will take closer to 1hr 45 mins and a larger one just over to 2 hrs).
- Check the chicken is cooked by 1 of two methods. Thermometer method – stick a thermometer into the thickest parts of the chicken (usually the breast and thigh) – and make sure the temperature has reached 70 degrees. If not, continue to cook for another 5-10 minutes and then check again until the required temperature is reached. Alternatively, stick a knife into the thickest parts of the breast and thigh and see if the juices that run out are clear. If the juices are pink, continue cooking the chicken another 5-10 minutes, then check again until there are clear juices. Once the juices run clear, the chicken is properly cooked.
8. Turn the temperature up to 200°C for fan-forced or 220°C regular oven and cook the chicken a for 5-10 minutes longer until the skin is a little browned from the higher heat. Then remove the chicken from the oven immediately.
9. Allow the chicken to sit and rest for 5-10 minutes.
