Lemon Tahini Sauce
Lemon tahini sauce

This is hands down a favourite sauce. It enhances many a green salad, and pairs perfectly with Roasted Cauliflower.

Ingredients

  • 3 small or 2 large lemons halved
  • 1 tablespoon hulled tahini
  • 1 garlic clove - finely chopped (optional)

Method

  1. Squeeze the 2 lemons into a bowl and remove the seeds.
  2. Add the tahini and mix, mash the tahini in to the lemon juice and mix thoroughly until the tahini is evenly spread. The tahini will begin to absorb the lemon juice and create a thicker and pastier sauce.
  3. Add the chopped garlic and mix through.

Tip: If you would like a thinner sauce you can add more lemon juice, or for a thicker sauce add extra tahini.

You can toss the sauce through a salad, or serve alongside or tossed through roasted cauliflower.
